Matcha (抹茶) is derived from the same plant that produces green tea, but goes through different farming and processing methods where the tea leaves are grown in the shade then ground to a fine powder. Lower end matcha will typically have a lighter color and a bitter. Higher grade matcha has a more vibrant green hue and a refined fragrant taste.
